The Chef Shack is Flying Fish's food cart stationed on our heated, covered patio. Launched in January 2022, our own Trever Gilbert serves as executive chef, with special dates featuring some of Portland's most innovative chefs. Open Friday, Saturday & Sunday 1–8pm.

    • MENU:
      • Fried okra corn cakes with goat cheese and slow roasted cherry tomatoes. 
      • Curated oysters on the halfshell with grapefruit granita OR shishito-apple mignonette.
      • Rye blini with smoked salmon, creme fraiche & everything bagel spice.
      • Seared coriander crusted Ahi Tuna with cucumber & fennel slaw.
      • Blackened fish sliders with smoked jalapeño aioli.
